Greek feta burgers

Real Greek flavors using feta cheese and roasted garlic and served on warm pitta bread. Makes 4 small Greek Feta Burgers.
***************Ingredients:4 large unpeeled garlic cloves
1.25 lb minced lamb
75g crumbled feta cheese
1g dried oregano
3g salt
1g black pepper
0.5 large cucumber, peeled, grated and squeezed very dry in a clean towel
170g sour cream
15g minced fresh mint leaves
5ml red vinegar
1 clove garlic, minced
1 large tomato, thinly sliced
1 red onion, thinly sliced
4 small (4 inch) pita breads
**************Method:
Begin by roasting the 4 whole garlic cloves until browned. This can be done in a hot oven for 20-25 minutes or 10-15 minutes in a skillet. Peel, mince and set aside.
Break up the lamb in a medium bowl. Sprinkle roasted garlic, feta, oregano, salt and pepper over meat and stir with a fork to combine well. Divide into 4 portions and flatten to about 4 inches wide. Refrigerate until required.
To make the Greek topping mix the cucumber, sour cream, mint, vinegar, 1 minced clove of garlic, and salt and pepper to taste in a small bowl. Refrigerate sauce until ready to serve.
Fry the burgers in a little oil for 5-7 minutes each side and grill the pitas for a minute or so per side. Split crosswise. Spread a couple of tablespoons of sauce over 4 pita halves. Top each with an onion slice, a tomato slice and a burger. Spread a portion of the remaining sauce over each burger. Top with remaining pita halves
